Tortilla Cheddar Chicken

Tortilla Cheddar Chicken

Ingredients
1 6 ounce container of organic Greek yogurt
1 tablespoon snipped chives
2 teaspoons organic garlic paste
1/2 teaspoon ground ancho chile
1 pound boneless skinless chicken breast fillets (thinly sliced) (about 5 fillets)
1 cup finely crushed tortilla chips
1 cup cheddar jack or Mexican blend cheese
1 lime, cut into wedges

Directions
Gather ingredients.

Preheat oven to 425 degrees. Stir together yogurt, chives, garlic paste, and  ground ancho chile in shallow bowl.

In second bowl stir crush tortilla chips and cheese together.

Coat both sides of chicken fillet with yogurt mixture.

Coat both sides of chicken fillet with chip and cheese mixture. Press slightly so mixture adheres to chicken fillet.

Place chicken fillets in baking pan. Bake at 425 degrees for 11 to 13 minutes or until golden brown.
Serve with lime wedge to squeeze over chicken. I also served Mexican rice as a side dish.
